Cutlers at Au Sabot are members of the prestigious Le Thiers Guild. Only the best earn membership in this select guild. Members are tested and inspected regularly for assurance of quality and integrity of methods. Tracing its origin to 1582 when French King Henry III established "The Coute de Tie Guild" to insure French cutlery quality, only members may use this protected mark on their products. This knife is presented with a genuine Pistachio wood handle. Pistachio wood is very unusual and stunningly beautiful with green, brown and even purple hues These are made by the La Coutellerie Au Sabot company in the Auvergne region of France who's family has been making fine cutlery since 1870. These make wonderful gifts. In many areas of France, ladies and gentlemen take their own distinctive personal knife into fine restaurants. The waiter cleans them and places them by their place setting. These are very elegant and premium quality in the French cutlery tradition.
