The small family company Goyon Chazeau has been making traditional cutlery in the Le Monnerie le Montel area near Thiers, France for generations and are members of the Le Thiers Guild insuring traditional methods and the best quality materials in all of their products. Master Guild is very pleased to offer the best of the best with their Le Thiers Professional Chef knives. This one is a nimble smaller size with a blade of about 15 cm (6"). Made from a forging makes it sturdy and substantial in the hand. It really feels like an extension of your hand! Unlike most knives made from sheets of steel, these are drop forged from individual red-hot billets of high Vanadium Stainless Steel. This produces the most beneficial, fine grain orientation for balance of toughness and hardness. They are expertly hardened and tempered for long life. The handle is nicely fitted with traditional and beautiful Olive wood for a warm feel and perfect fit. In France, the top chefs are considered "super stars" and several of the best insist on Goyon- Chazeau knives for their art. Hand wash these as you would any fine cutlery. Once per year, a light coat of olive or mineral oil is all that is required to keep the handles beautiful. You will never find a nicer chef knife from any country. This one will be handed down
